5-Minute Chocolate Muffins are super soft treats perfect for a mouth-watering breakfast or a snack to share, thanks to their light texture and melt-in-your-mouth chocolate they will win you over at first taste. The recipe is really simple, the dough mixes quickly without the need for any special appliances, you will just need a simple whisk and a bowl.
Ingredient:
- 220g / 1¾ cups all-purpose flour (plain flour in UK)
- 30g / ¼ cup unsweetened cocoa powder
- 165g / ¾ cup + 1 tbsp granulated sugar (caster sugar in UK)
- 125g / ½ cup plain Greek yogurt
- 50ml / ¼ cup milk
- 2 medium eggs
- 10g / 2 tsp baking powder
- 75ml / ⅓ cup peanut oil (or any neutral-flavored oil)
- OR 90g / 6 tbsp softened butter
- 1 tsp vanilla extract
- 1 tsp orange zest, grated (optional)
- 100g / ¾ cup dark chocolate chips
How to make 5 Minute Chocolate Muffins:
- Shell the eggs in the bowl, add the sugar and mix well with a whisk then add the yogurt, oil, vanilla and orange zest incorporating everything.
- In the other bowl sift the flour with the cocoa and baking powder,set aside.
- Pour the liquid ingredients, a little at a time, into the bowl with the solid ingredients, mixing with a whisk to make a smooth dough.
- Add 60 g of chocolate chips.
- Pour the batter into the ramekins inserted in the muffin mold and spread the remaining chocolate chips on top.
- Bake the muffins in a preheated static oven at 180°c (350 °F) for about 17 to 18 minutes.
- Do a toothpick test to make sure they are cooked; extend by a few minutes if necessary.
- The 5-minute chocolate muffins are ready, let them cool completely and serve.
