5-Minute Tangerine Cake :This is the only orange recipe that you need

Tangerine 5-minute cake is a fresh cake with a delicate taste perfect for breakfast or snack, a quick recipe that the whole family will love.

Christmas has recently passed and I’m craving simple and light desserts like my 5 minute cakes, a strand I made for you full of easy variations perfect for a good start to the day.

Today I propose the version with tangerines, very fluffy and aromatic it contains no butter and is also perfect for filling; if you want to prepare a lactose-free version you can replace whole milk with almond or soy milk.

Ingredients :

  • 260g (2 cups) all-purpose flour
  • 150g (3/4 cup) granulated sugar (caster sugar)
  • 100ml (1/2 cup) tangerine juice (mandarin orange juice) – about 4 juicy fruits
  • 50ml (1/4 cup) milk
  • 80ml (1/3 cup) peanut oil (groundnut oil) or 95g (7 tablespoons) softened butter
  • 2 medium eggs
  • 1 packet (2 teaspoons) baking powder
  • 1 teaspoon vanilla extract
  • 2 teaspoons grated tangerine zest
  • 2 tablespoons coarse sugar

For greasing the pan:

  • 10g (1 tablespoon) butter
  • 1 tablespoon all-purpose flour

How to make 5-Minute Tangerine Cake:

  1. Wash the organic mandarins, dry them, grate the peel and squeeze them to obtain the juice.
  2. In a bowl sift the flour with the baking powder, add the sugar and mix.
  3. In another bowl put the eggs, juice and zest of the mandarins, milk, oil and vanilla, mix everything with a whisk to mix the ingredients well.
  4. Pour the liquid ingredients into the bowl with the powders and mix with a whisk to make a smooth, lump-free mixture.
  5. Grease and flour a 22 cm diameter mold.
    Pour the mixture into the mold and spread the granulated sugar on top

How to bake 5-minute tangerine cake

  1. Bake the cake in a preheated static oven at 180°C (350°F) for about 40 minutes; baking time depends on the power of the oven, always do the toothpick test.
  2. Take the cake out of the oven, let it cool and lay it on a plate. Let it cool completely.
  3. The 5-minute tangerine cake is ready; serve it plain or with a spoonful of custard.
