Ingredients :
- 2 fennel bulbs
- 50g (⅓ cup + 1 tbsp) all-purpose flour (type 0 flour)
- 40ml (2 tbsp + 2 tsp) extra virgin olive oil
- 350ml (1½ cups) water
- 40g (⅓ cup) grated Pecorino cheese
- 4 tbsp breadcrumbs
- Marjoram (to taste)
- Thyme (to taste)
- Nutmeg (a pinch, to taste)
- Salt (to taste)
How to make Air Fryer Fennel Tart :
1. Prepare the Fennel:
Clean the fennel bulbs by removing the core, stems, and any spoiled outer leaves. Rinse them thoroughly under cold water.
Slice the fennel into ½-inch-thick pieces. Place them in a pot and cover with cold water.
2. Cook the Fennel:
Bring the pot to a boil over medium heat. Once boiling, add a pinch of salt and cook for 8 minutes.
Drain the fennel and set it aside.
3. Make the Cream Sauce:
In a small saucepan, combine the extra virgin olive oil and flour over low heat. Stir until the mixture forms a thick paste.
Gradually add the room-temperature water, pouring it in a thin stream while continuously stirring. Cook until the sauce thickens into a creamy consistency.
Season with salt and a pinch of grated nutmeg, then remove from heat.
4. Prepare the Breadcrumb Topping:
In a small bowl, mix the breadcrumbs with a pinch of thyme and marjoram. Set aside.
5. Assemble the Bake:
Lightly oil the bottom of an air fryer-safe baking dish. Sprinkle a layer of the flavored breadcrumbs over the oil.
Arrange a layer of cooked fennel slices in the dish. Top with a portion of the cream sauce, a sprinkle of grated Pecorino cheese, and a pinch of salt.
Repeat the layers—fennel, cream sauce, Pecorino, and salt—until all ingredients are used, finishing with a generous layer of Pecorino on top.
6. Cook in the Air Fryer:
Preheat the air fryer to 200°C (400°F).
Place the baking dish in the air fryer and cook for 12 minutes, or until the top is golden and bubbly.
7. Serve:
Remove the dish from the air fryer and let it rest for 15 minutes to set. Serve warm as a delicious side dish or light main course.
