Sacher biscuit recipe for CHRISTMAS Cocoa BISCUITS not only yummy but also scenic, actually SACHER CAKE-flavored cookies you can make all year round, but I wanted to make them Christmasy by making star-shaped cookies.

Ingredients :

For the chocolate shortcrust pastry:

  • 250g (2 cups) plain flour
  • 30g (1/4 cup) unsweetened cocoa powder
  • 130g (1/2 cup + 1 tbsp) unsalted butter, softened
  • 100g (1/2 cup) caster sugar
  • 1 tsp vanilla extract
  • 1 egg yolk
  • 1 whole egg

For the filling and decoration:

  • 100g (1/3 cup) apricot jam
  • 100g (1/2 cup) dark chocolate chips

How to make Austrian Sacher biscuit:

  1. To prepare the cocoa and jam cookies first devote yourself to making the cocoa shortbread dough:
  2. In a bowl, place the chopped butter with the sugar and vanilla extract.
  3. Soften the butter with a whisk or spoon.
  4. Add the yolk and whole egg to the buttercream , mix and add the flour and bitter cocoa.
  5. Knead the ingredients with your fingertips to make a smooth, even dough, wrap the cookie dough in plastic wrap and refrigerate for 30 minutes.
  6. Take the dough ball again and with a rolling pin roll it out between two sheets of baking paper half an inch thick.
  7. Using star shapes, cut out the cocoa cookies and place them on a baking sheet lined with parchment paper.
  8. Bake them in a preheated oven in static mode at 180° C (350°F) for about 15 minutes.
  9. Knead the shortcrust pastry again and roll it out, again using the cut-outs cut out more stars of the same number as the previous ones, with a smaller stencil pierce the cookies in the center and bake them again in a static oven at 180° for 12 minutes.
  10. Remove from the oven and let cool completely.
  11. While you are waiting, chop the dark chocolate and melt it in a bain-marie or microwave.
  12. Spread the whole cookies with apricot jam and place the pierced cookies on top.
  13. With the help of a spoon put the chocolate frosting on the sacher-flavored cookies; I preferred to do one side, but you decide.
  14. Place the chocolate frosted cookies on a sheet of parchment paper or on a wire rack and let them rest for 30 minutes so that the chocolate sets.
  15. Transfer the Sacher Cookies to a plate and enjoy!
