Bacon from Heaven: Surprise Your Guests with This Easy Portuguese Dessert

Bacon from heaven (Bolo Toucinho do Céu) As well as being an economical recipe, this cake offers a delicious experience with its different texture, which is neither entirely cake nor entirely pudding. Ingredients :

  • 4 large eggs
  • 200g / 1 cup sugar (granulated, caster, or demerara)
  • 480ml / 2 cups milk
  • ¼ teaspoon salt
  • 113g / ½ cup unsalted butter
  • 90g / ¾ cup all-purpose flour
  • 1 tablespoon baking powder
  • 200ml / 6.8 fl oz coconut milk
  • 50g/ ½ cup shredded coconut (desiccated or fresh)

How to make Bacon from heaven:

  1. In a blender, add 4 eggs, 1 cup of sugar, 2 cups of milk and a generous pinch of salt. Blend for 3 minutes until smooth.
  2. Add ½ cup of butter, ¾ cup of flour and 1 level tablespoon of baking powder to the blender. Also add 200 ml of coconut milk. Beat again for another 3 minutes until the mixture is uniform.
  3. Add ½ cup of shredded coconut to the mixture in the blender. Stir with a spatula to incorporate the coconut evenly into the batter.
  4. Grease an 18 cm x 28 cm rectangular baking dish with butter and flour. Pour the batter into the pan, spreading it out evenly.
  5. Preheat the oven to 200°C (395°F) and place the baking sheet on the lowest rack. Bake for approximately 30 minutes, or until the surface is golden and a toothpick inserted in the center comes out slightly damp.
  6. After baking, run a knife around the edges to loosen the cake and leave to cool on the baking sheet. Cut into pieces and serve.
