Bean and Coconut Tart : Let’s Make A Family Favorite Together

Want to impress your dinner party guests with a unique and mouthwatering dessert? Try serving them a Bean and Coconut Tart! It’s creamy, delicious, and yes, it’s made with beans. Blending white pea beans into the coconut filling not only gives it a tasty twist but also adds a healthy dose of fiber and protein. Ingredients

  • 1 sheet of puff pastry
  • 280g (10 oz) white beans, canned
  • 350g (1¾ cups) sugar
  • 80g (⅔ cup) flour
  • 80g (⅓ cup) margarine
  • 5 eggs
  • 100g (1 cup) desiccated coconut
  • Sugar for dusting

How to make Bean and Coconut Tart:

  1. Preheat the oven to 180ºC (350°F).
  2. Roll out the dough in a pie dish and prick the base with a fork. Set aside.
  3. Drain the beans from the can and rinse them. Drain again and mash.
  4. Combine the bean puree with all the other ingredients in a bowl. Mix well until the mixture is completely homogeneous.
  5. Pour the mixture over the base of the tart, sprinkle with sugar and bake for about 35 minutes, or until golden brown.
