Ingredients
- 1 sheet of puff pastry
- 280g (10 oz) white beans, canned
- 350g (1¾ cups) sugar
- 80g (⅔ cup) flour
- 80g (⅓ cup) margarine
- 5 eggs
- 100g (1 cup) desiccated coconut
- Sugar for dusting
How to make Bean and Coconut Tart:
- Preheat the oven to 180ºC (350°F).
- Roll out the dough in a pie dish and prick the base with a fork. Set aside.
- Drain the beans from the can and rinse them. Drain again and mash.
- Combine the bean puree with all the other ingredients in a bowl. Mix well until the mixture is completely homogeneous.
- Pour the mixture over the base of the tart, sprinkle with sugar and bake for about 35 minutes, or until golden brown.
