Chiacchiere di Carnevale (Italian Carnival Sweet Fried Pastries) is ideal for beginners or those who have never made them before. Along with Castagnole, Chiacchiere are the most famous Carnival sweets in Italy. They can be fried like donuts or ring doughnuts, or baked for a crispier texture.
This Sweet Fried Pastries always succeeds whether made by hand or with a stand mixer, and doesn’t require resting time. The well-tested recipe ensures consistent results every time.
Ingredients :
- 240g (1¾ cups) ’00’ flour
- 50g (¼ cup) sugar
- 60g (¼ cup) unsalted butter
- 20ml (4 teaspoons) white wine
- Zest of ½ lemon
- 1 pinch of salt
- 2 eggs
- Peanut oil for frying, as needed
How to make Chiacchiere di Carnevale (Italian Carnival Sweet Fried Pastries):
- We prepare the dough by sifting the flour and placing it on the pastry board. We add the eggs, wine, sugar, salt and melted butter.
- We start kneading everything well for 2,3 minutes. We have to get a homogeneous dough, let’s pass it through the pasta machine until we get thin sheets.
- Let’s cut them into various different shapes with the dough washer, and either fry them or bake them by placing them on a baking sheet and baking at 180°C (350 °F) ventilated for 20,25 min. Once ready, let’s serve them with a dusting of powdered sugar.
