Christmas Russian Salad: The Recipe for a Rich and Creamy Festive Starter

Christmas Russian Salad is the ultimate Christmas appetizer, a great classic that can never be missing from the holiday table. Prepared in many different variations, the original recipe calls for the use of potatoes, carrots and peas, accompanied by hard-boiled eggs and pickled gherkins: these simple ingredients, mixed with mayonnaise, create a creamy and flavor-packed dish, perfect to serve cold at the opening of the December 25 lunch or Christmas Eve dinner, or to propose as a tasty side dish at an evening with guests.

Ingredients :

For the salad:

  • 250 g / 9 oz potatoes, peeled and diced
  • 250 g / 9 oz carrots, peeled and diced
  • 100 g / 3.5 oz peas (fresh or frozen)
  • 100 g / 3.5 oz pickled gherkins, diced
  • 4 eggs
  • Salt, to taste

For the mayonnaise:

  • 400 ml / 13.5 fl oz sunflower oil (or any neutral oil)
  • 2 tablespoons white wine vinegar
  • 2 eggs
  • Salt, to taste

For finishing:

  • A sprig of parsley, finely chopped

How to make Christmas Russian Salad:

  1. First, peel the potatoes and cut them into small cubes Peel the carrots, trim them, and also cut them into chunks the same size as the potatoes Pour water into 3 large saucepans, add a pinch of salt, and bring to a boil; then plunge the diced potatoes into the first saucepan and let them cook for about 10 minutes.
  2. Also boil the carrots for about 7 minutes Blanch the peas for 4 minutes in boiling water ; as they are ready, drain the vegetables and let them cool completely in a large bowl.Dip the eggs in a saucepan of cold water and let them firm up for 8 minutes from boiling.
  3. Then drain the hard-boiled eggs and transfer them to a bowl with ice water : in this they will drain easily and you will not risk breaking them.Prepare the mayonnaise: pour the eggs, seed oil , a pinch of salt and white wine vinegar into the bowl of a blender.
  4. Blend the ingredients with an immersion blender When done, you should obtain a creamy, homogeneous mixture When they are well cooled, shell the hard-boiled eggs Transfer the hard-boiled eggs to the bowl with the rest of the now-cold vegetables Add the diced pickled gherkins Season with mayonnaise Mix everything well with a spoon Arrange the Russian salad on a serving plate Garnish the Russian salad with a sprig of parsley , bring to the table and serve.
