How to make Coconut Flan

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, vigorously beat the eggs with an electric mixer until frothy.
  3. Add the sweetened condensed milk while continuing to beat. Mix until the preparation is homogeneous.
  4. Incorporate the full-fat coconut milk, beating constantly to integrate it well.
  5. Pour in the evaporated milk and mix one last time to obtain a smooth and creamy preparation.
  6. If desired, gently fold in the shredded coconut.
  7. Grease a 6-cup (1.4 liter) capacity baking dish or flan mold generously.
  8. Pour the mixture into the mold and smooth the surface.
  9. Bake for about 45 minutes, or until the top is golden brown and a knife inserted in the center comes out clean.
  10. Upon removing from the oven, cover the flan with a clean kitchen towel to prevent rapid cooling.
  11. Once lukewarm, refrigerate for at least 2 hours, ideally 4 hours or overnight.
  12. Carefully unmold and serve chilled.
