This Coffee Rum and Dried Fruit Cookie Pan recipe is perfect for surprising your guests during New Year’s Eve dinner. This soft and fragrant dessert is perfect with a good sweet wine to toast the New Year in style!

Ingredients :

  • 500g (4 cups) plain flour / all-purpose flour
  • 1 sachet (7g / ¼ oz) dried active yeast
  • 1 large egg
  • 250ml (1 cup) milk
  • 1 tbsp instant coffee powder
  • 1 tsp ground cinnamon
  • 160g (11 tbsp / ⅔ cup) unsalted butter, softened
  • 1 pinch of salt
  • 80ml (⅓ cup) dark rum
  • 100g (⅔ cup) raisins
  • 200g (1½ cups) mixed nuts, chopped (walnuts, cashews, pistachios, almonds, hazelnuts)

How to prepare Coffee, Rum, and Dried Fruit New Year’s Cake:

  1. Dissolve 1 packet of dry yeast in 50 ml of warm milk and let it sit for 10 minutes until it becomes foamy.
  2. In a large bowl, add 500 grams of flour and a pinch of salt.
  3. Add the activated yeast mixture, 1 egg, 100 grams of melted butter, 1 tablespoon of instant coffee, and 1 teaspoon of cinnamon to the flour.
  4. Mix all ingredients together until a smooth dough forms.
  5. Gradually add the remaining 150 ml of milk and 2 tablespoons of rum, mixing well after each addition.
  6. Mix 100 grams of mixed nuts into the dough thoroughly.
  7. Soak 100 grams of raisins in cold water for 10 minutes, then squeeze them dry.
  8. Incorporate the soaked raisins into the dough mixture.
  9. Cover the bowl with a clean tea towel and let the dough rise in a warm, draft-free place for about 2 hours, or until it doubles in size.
  10. Transfer the risen dough to a floured surface, knead for a few minutes, shape it into a large loaf, and place it on a baking sheet lined with parchment paper.
  11. Cover the loaf with the tea towel and let it rise for another 30 to 40 minutes, then preheat the oven to 180 degrees
  12. Celsius (350 degrees Fahrenheit).
  13. Bake the loaf for 35-40 minutes, until it is golden brown and a toothpick inserted comes out clean, then cool it on a wire rack before serving.
