This super refreshing creamy pineapple dessert is delightfully light and takes very little effort to prepare. Perfect crowd pleaser and an excellent finish to any meal.
Ingredients:
- 450g / 16 oz pineapple in syrup
- 395g / 14 oz sweetened condensed milk
- 5 large eggs
- 60g / 2 oz pineapple-flavored gelatin
How to make Creamy Pineapple Mousse:
- Bring the pineapple syrup to the boil in a saucepan and stir.
- When it boils, add the gelatine.
- Stir until the gelatine is dissolved, turn off the heat and set aside.
- Separate the egg yolks from the egg whites and place them in different bowls.
- In the bowl with the yolks, add the condensed milk, beat with a whisk until well blended, and set aside.
- Whisk the egg whites in the other bowl.
- Slowly add the syrup and gelatine and stir until everything is combined.
- Then add the egg whites to the mixture of condensed milk and egg yolks and mix well.
- Finally, add the pineapple cut into pieces and mix with the ingredients.
- Pour the mousse into small or large bowls and refrigerate for 4 hours.
- After 4 hours, the mousse is ready to be served. If you wish, you can decorate it with pieces of pineapple.
