Creamy Pineapple Mousse: Bursting with Flavor

This super refreshing creamy pineapple dessert is delightfully light and takes very little effort to prepare. Perfect crowd pleaser and an excellent finish to any meal.

Ingredients:

  • 450g / 16 oz pineapple in syrup
  • 395g / 14 oz sweetened condensed milk
  • 5 large eggs
  • 60g / 2 oz pineapple-flavored gelatin

How to make Creamy Pineapple Mousse:

  1. Bring the pineapple syrup to the boil in a saucepan and stir.
  2. When it boils, add the gelatine.
  3. Stir until the gelatine is dissolved, turn off the heat and set aside.
  4. Separate the egg yolks from the egg whites and place them in different bowls.
  5. In the bowl with the yolks, add the condensed milk, beat with a whisk until well blended, and set aside.
  6. Whisk the egg whites in the other bowl.
  7. Slowly add the syrup and gelatine and stir until everything is combined.
  8. Then add the egg whites to the mixture of condensed milk and egg yolks and mix well.
  9. Finally, add the pineapple cut into pieces and mix with the ingredients.
  10. Pour the mousse into small or large bowls and refrigerate for 4 hours.
  11. After 4 hours, the mousse is ready to be served. If you wish, you can decorate it with pieces of pineapple.
