Crispy Cabbage Fritters: A Surprising Crowd-Pleaser

The recipe for Crispy Cabbage Fritters is very simple and they are perfect as an appetizer or side dish or even as a main dish. They are nutritious and full of flavor. The cabbage adds a slightly sweet flavor that goes well with the other ingredients.

Ingredients :

For the Fritters:

  • 1 cabbage, finely chopped
  • 300ml (1¼ cups) kefir or plain yogurt
  • 200g (1⅔ cups) all-purpose flour
  • 3 eggs
  • 1 onion, finely chopped
  • 1 carrot, peeled and grated
  • Extra virgin olive oil for frying
  • 1 tsp baking powder
  • Salt to taste

For the Yogurt-Cucumber Sauce:

  • 1 cucumber, grated and finely chopped
  • 20g (1½ tbsp) light mayonnaise
  • 2 tbsp low-fat yogurt
  • 1 garlic clove, grated

How to make Crispy Cabbage Fritters:

  1. First, break the eggs in a bowl, add salt, after which beat them properly with the help of a fork.
  2. Now add the kefir, stir, incorporate the flour and baking powder, mix to make a smooth and homogeneous batter and set aside.
  3. Now pour a drizzle of olive oil into a nonstick pan, transfer the chopped onion, sauté 3-5 minutes, incorporate the peeled and grated carrot, stir, let cook 3-5 minutes, let cool and then add them to the batter and mix.
  4. Pour another drizzle of olive oil into a nonstick pan, integrate the shredded cabbage, cover with a lid, let wilt for a moment, uncover, stir, sauté 5 minutes, season with salt and put the lid back on.
  5. Meanwhile, let’s also prepare the sauce: place the mayonnaise in a small bowl, add the yogurt, grated garlic clove, grated and chopped cucumber with a knife, and stir so that you have an accompanying sauce.
  6. Turn off the cabbage once it is soft and well cooked, let it cool and then incorporate it into the batter and stir to make a mixture with a smooth, soft and even consistency.
  7. Finally grease a nonstick pan well with olive oil, pour in as many spoonfuls of batter at a time well spaced out, cover with the lid and let cook 3-4 minutes on both sides over a gentle flame.
  8. Once the fritters are golden brown, remove to a plate and continue with the batter until you finish it all. When finished, enjoy the cabbage pancakes together with the yogurt and cucumber sauce.
