Crispy Potato pizza has all the makings of becoming your favorite dish, as it is definitely flavorful and tasty enough to make dinner or lunch special even with simple ingredients. Everyone will love it, so much so that once served you will hardly have even a small piece left over.
Ingredients:
- 1 cup of milk
- 1 cup of flour
- 4 potatoes
- 3 spring onions, sliced into rings
- 3 eggs
- 2 carrots, peeled and grated
- 1 bell pepper, diced
- 1 teaspoon of baking powder
- A drizzle of extra virgin olive oil
- 1 cup of grated light Galbanino cheese
- Salt and pepper to taste
How to make Crispy Potato Pizza:
- First peel the potatoes, grate them into a bowl, cover them with cold water, stir and let them stand 20 minutes.
- Meanwhile, pour a drizzle of evo oil into a nonstick pan, insert the peeled and grated carrots, stir well and brown them 2 minutes.
- Now add the diced bell bell pepper, stir, let it brown for 2-3 minutes, add the sliced spring onion branches, salt and pepper, stir and let it cook for another 5 minutes.
- Now break the eggs into a bowl, integrate the salt and milk, beat them with a hand whisk, incorporate the baking powder and flour in two steps and mix thoroughly to make a smooth batter.
- Incorporate the potatoes (after draining and squeezing them) and sauteed vegetables, after which stir with a spatula, taking care to get all the ingredients to bind.
- Having done this, line a drip pan with appropriate paper, grease it with oil and spread the mixture evenly over it, bake in a preheated oven for 20 minutes at a temperature of 180°C (350°F).
- Finally, place the yogurt, mayonnaise, chopped parsley and salt in a small bowl, mix to make a sauce and set aside, then sprinkle the surface of the pizza with the grated galbanino cheese and bake for 10 minutes at a temperature of 180°C. Then bring to the table!
