Delicious Marzipan Raspberry Cookies : A Festive Delight…
The Christmas bakery is open. Today we are baking sweet marzipan raspberry cookies. These tender, buttery cookies are perfect for the winter season and taste great with afternoon coffee or simply as a snack. Let’s bake them together!
Ingredients:
For the dough:
- 400g (3¼ cups) plain flour
- 100g (¾ cup) icing sugar (powdered sugar)
- 2 eggs
- 1 pinch of salt
- A few drops of bitter almond extract (optional)
For the decoration:
- Raspberry jam
- Icing sugar (powdered sugar) for dusting
How to prepare delicious Marzipan Raspberry Cookies:
- Knead all the ingredients for the dough together. Then wrap it in cling film and place it in the fridge for at least a few minutes.
- Then roll the dough into small balls.
- Line a baking tray with baking paper and place the balls on it with some space between them. Flatten each ball slightly.
- Now press heart-shaped indentations into the cookies using ice cream sticks, modeling tools or your thumbs.
- Bake the marzipan cookies for 12 minutes at 200 °C (400°F )top/bottom heat.
- If necessary, press the hearts in again a little while the cookies are hot.
- Leave the cookies to cool. Meanwhile, heat the raspberry jam and pipe it into the cavities.
- Dust the marzipan raspberry cookies immediately with powdered sugar and leave the jam to dry for 12 hours before placing the cookies in a tin.
