Flavorful Almond Orange Cake :A Vibrant, Nutty Delight!

Flavorful Almond Orange Cake is a soft and fragrant cake prepared without butter.

The orange flavor comes from both the squeezed juice of fresh fruit and the grated zest.

In addition, orange liqueur can be added to enhance the flavor even more.

Almonds, added either in the form of flour or peeled and finely chopped almonds, make the cake even better and slightly rustic.

This cake is perfect to be enjoyed at breakfast or snack time with a light dusting of powdered sugar, but it becomes even more special if we fill it with a cream that is also orange or chocolate.

Ingredients:

  • 3 large eggs
  • 170g (¾ cup) granulated sugar
  • 200ml (¾ cup) freshly squeezed orange juice
  • 20ml (1 tbsp) orange liqueur (or rum)
  • 100ml (⅓ cup) peanut oil (or any neutral oil)
  • 220g (1¾ cups) all-purpose flour (type 1 flour)
  • 120g (1¼ cups) almond flour (or finely ground almonds)
  • 1 sachet (about 2 tsp) baking powder
  • 1 pinch of salt
  • 2 oranges (zest only, finely grated)

How to make Flavorful Almond Orange Cake:

  1. Grate the zest of a couple of large oranges and keep it aside.
  2. Shell the eggs in a bowl and add the sugar.
  3. Beat them with electric whips until puffy and light.
  4. Combine the peanut oil or another neutral-flavored oil and the orange liqueur or alternatively the rum.
  5. Squeeze the juice from a few oranges until you get 200 grams.
  6. Oranges whose zest we have already grated plus others if needed are perfect to use.
  7. Pour the juice into the bowl with the eggs and process at low speed with the electric beater.
  8. Then add the type 1 flour sifted with the baking powder.
  9. Also combine the pinch of salt and the almond flour.
  10. If we do not have it on hand, we can finely chop 120 grams of peeled almonds and use the resulting chopped mixture.
  11. Also add the grated zest of the oranges.
  12. Gently mix the mixture, obtaining a smooth and uniform dough.
  13. Grease and flour a round, opening mold with a diameter of 20 centimeters.
  14. Pour in the orange mixture and lightly beat the cake pan to remove any air bubbles.
  15. Bake the almond-orange cake in a static oven preheated to 180 degrees for about 50 minutes.
  16. Let cool then unmold the cake onto a wire rack to cool completely.
  17. Then transfer it to a serving plate and decorate with powdered sugar a few moments before serving.
