For the pastry:
- 300g (2 1/2 cups) all-purpose flour
- 100g (1/2 cup) granulated sugar
- Grated zest of half a lemon
- 1 tsp vanilla extract
- 5g (1 tsp) baking powder
- 140g (10 tbsp) unsalted butter, cut into pieces
- 1 large egg
- 25ml (1 3/4 tbsp) milk
For the filling:
- 300g (1 cup) jam of your choice (I recommend apricot)

- For the making of this simple and delicious easy tart cake jam filling we start by preparing the shortcrust pastry base.
- In a bowl pour the 00 flour , caster sugar , baking powder , zest of half a lemon and mix everything together.
- Add the butter cut into pieces to the mixture , and begin kneading until a sandy mixture is obtained .
- Add the whole egg , the milk and knead everything until you get a smooth dough ball , wrap it with plastic wrap and let it rest in the refrigerator.
- Once rested, peel off 3/4 of shortcrust pastry loaf, roll out the shortcrust pastry with a thickness ci about 1 cm and line a buttered and floured 22-cm dm tart pan.
- Add the jam filling to the tart and with the remaining shortcrust pastry , form the classic stripes decorating the cake with some stencils as well.
- Bake the tart in the static oven previously preheated to 180°C (355°F) for about 35 minutes.
- Once baked and left to cool, place the cake on a serving plate and if you prefer, sprinkle it with powdered sugar.
