Ingredients:
- 2 large eggs
- 200g (3/4 cup) Greek yogurt
- 50g (about 1/2 cup) desiccated coconut
- 1 teaspoon vanilla extract
- 1 teaspoon stevia (or preferred sweetener)
- Zest of 1 lemon
- 1 teaspoon baking powder
