How to Make Gougères, or Savory Choux Pastry…
Savory Olive Puffs are an elegant and tasty appetizer. They are fast to make if you use ready-to-use puff pastry, so you can prepare them at the last minute. Alternatively, you can make them at home by using the foolproof pasta choux. The practical thing is that they last a long time in the pantry. They are perfect antipasti for a Christmas menu but also ideal for winter or New Year’s Eve. You can make the puffs at home by following the recipe for homemade puffs, and you will see that they will come out great, puffy, and hollow inside.
Ingredients :
For the Choux Puffs :
- 20 ready-made choux pastry shells (about 2 inches/5 cm in diameter)
For the Filling:
- 1 cup ricotta cheese
- 1 cup cream cheese, softened
- 1/2 cup mixed olives, finely chopped
- Suggestion: Use a combination of green and black olives
- 1 small clove of garlic, minced (optional)
- Salt, to taste
- Freshly ground black pepper, to taste
For Garnish:
- Additional olives, sliced or whole
- Fresh rosemary sprigs
How to Make Gougères, or Savory Choux Pastry:
- We prepare the cream by finely chopping the olives, then put them in a bowl and add the ricotta, cream cheese spread, salt and pepper. Let’s mix all the ingredients well.
- Let’s mix everything until we get a smooth cream. We divide the ready-made puffs in two and fill them with the olive cream with the help of a pastry bag with a star tip or simply with a spoon.
- Let’s decorate the surface of the puffs with a little cream, a few olives and some rosemary. After 20 minutes in the refrigerator, let’s serve and enjoy them. You will see these Savory Olive Puffs will disappear in no time.
