How to Make the Perfect Jam Tart: The Secret to a Crumbly Pastry. On these festive days, when the house is open to friends and family, there is nothing better than offering a slice of homemade jam tart to guests. Although it is not a particularly difficult pie to prepare, in this article we want to suggest a little secret to make the dough even more crumbly.

Ingredients:

  • 300g (2⅓ cups) all-purpose flour
  • 170g (¾ cup) unsalted butter, softened
  • 120g (½ cup + 1 tablespoon) granulated sugar
  • 2 egg yolks
  • Zest of 1 lemon
  • Pinch of salt

How to Make the Perfect Jam Tart:

  1. First you will need to prepare the shortcrust pastry.
  2. Work the flour well with the sugar, then add the softened butter and finally the two egg yolks.
  3. Add grated lemon peel, a pinch of salt and knead the dough by hand.
  4. From this mixture you will need to make two loaves, one larger than the other.
  5. The larger loaf will need to be laid on the baking paper.
  6. With your hands you will need to press it down until it is flattened and then continue rolling it out with a rolling pin.
  7. Then let the shortcrust pastry rest in the refrigerator for about an hour.
  8. After that you can retrieve it to make your jam tart. Finally, you can bake it in a static oven preheated to 180 degrees for about 40 minutes.
