Italian Almond Chocolate Cookies : It’s Cookie Time

To prepare these delicious Italian Almond Chocolate Cookies, you will only need 4 ingredients and a few minutes of time. Not only do they taste good, but they are also packed with essential nutrients for our bodies.

These almond and cocoa cookies are really delicious and nutritious. Almonds are rich in vitamins, minerals and antioxidants, while bitter cocoa is a source of magnesium and antioxidants. In addition, since they are free of flour and butter, they are also suitable for those on a gluten- or lactose-free diet. Ingredients:

  • 140g (1 cup) whole almonds
  • 70g (1/3 cup) stevia sweetener
  • 60g (3/4 cup) unsweetened cocoa powder
  • 2 large egg whites

How to make Italian Almond Chocolate Cookies :

  1. To begin, place the almonds in the glass of your blender and blend them in jerks for 50 seconds. This will allow you to achieve a fine, smooth consistency. Once blended, transfer them to a large bowl. Leave a few spoonfuls aside to decorate the surface of your cookies a bit at the end.
  2. Now it’s time to add the stevia sweetener (or brown sugar) and bitter cocoa. Mix everything together with a spoon, making sure the ingredients blend well. At this point, add the egg whites and continue mixing until the mixture is firm.
  3. Prepare a drip pan by lining it with appropriate paper. Spread many distinct spoonfuls of dough on it. To give an extra crunch, sprinkle the surface of the cookies with some chopped almonds left aside at the beginning.
  4. Place the drip pan in the preheated 120°C  (250°F) oven and let the cookies bake for 30 minutes. This low temperature will allow the cookies to bake slowly, keeping all the nutrients from the almonds and cocoa intact.
  5. Once the baking is finished, allow the cookies to cool for as long as necessary. This will give you a crisp texture on the outside and a soft texture on the inside. Once cooled, the cookies are ready to be enjoyed.
