Italian Mixed Boiled Meats: best for CHRISTMAS MENU

This Italian mixed boiled meats, as we make it in our house, is a classic recipe for the Christmas menu. It is traditional to prepare it with green sauce for boiling, but it can also be served with mustard. Ingredients :

  • 800 grams (28 oz) beef shoulder

  • 1 large onion
  • 2 cloves
  • 1 teaspoon peppercorns
  • 1 teaspoon coarse salt

  1. Peel the onion and insert two cloves.
  2. Tie the parsley with a small kitchen string.
  3. Peel the carrots and remove the ends.
  4. Remove the ends from the celery as well .
  5. Place the carrots, celery and onion in a pot along with the parsley.
  6. Add the peppercorns and coarse salt.
  7. Put the lid on and bring to a boil.

For the meat:

  1. I used beef shoulder, thigh muscle and bones (biancostato).
  2. Tie the meat with kitchen twine.
  3. Dip the pieces of meat into the already boiling water.

Cooking the boiled meat:

  1. Cook the boiled meat (or rather boiled meat) for about 3 to 4 hours over a very low flame; it should simmer.
  2. Turn off the heat and let it cool then with a skimmer remove the fat that will have surfaced and strain the broth.
