Little Coconut Treats : Super Easy Snack Recipe!…
This little Coconut Treats can be made in minutes and are so good that they are finished in no time. While searching the web for new recipes to make my box of Christmas cookies I came across a German site that caught my attention, the coconut cookies were really nice to look at and looked super soft, so I tried them.
I can’t tell you how long they keep because they were finished in a day, they were really delicious, soft, fragrant and not at all chewy; perfect for a tea party with friends.
Ingredients:
- 200g (2 cups) desiccated coconut
- 180g (1½ cups ) icing sugar
- 4 egg whites (from medium eggs)
How to bake the little coconut treats
- Put the egg whites and powdered sugar in a small saucepan, mix well then heat on the stove without exceeding 60°C (140°F) . Stir vigorously with a whisk so that the sugar melts(I used a very cheap but extremely handy thermometer but it is not necessary, just heat the mixture until the sugar is well melted).
- Add the raped coconut and stir with a spoon until the mixture is thick and sticky. Turn off the heat and let cool.
- With the help of two teaspoons, form piles on the drip pan lined with baking paper; you can make 40 small or 20 large pastries.
- Bake the cookies in a preheated static oven at 175°C (345°F) for 13/14 minutes or until the surface is lightly browned. The cookies will still be soft; don’t worry, they will firm up as they cool.
- Take them out of the oven and let them cool completely without touching them.
- The coconut cookies are ready to enjoy. Want to make them even yummier? Decorate them with a bit of melted chocolate, they’ll go fast!
