Mediterranean-Style Potatoes:Prepared with the concept of my foolproof Mediterranean chicken breast, the one you all loved and that started all my Mediterranean recipes, including Mediterranean meat, Mediterranean eggs, Mediterranean swordfish, and Mediterranean pasta! We could consider Mediterranean-style potatoes one of my delicious potato side dishes, but if you like, you can also serve it as a vegetarian main course, perhaps by adding some other vegetables! Considering the cooking times, you could also add salmon fillets or shrimp to the pan along with the potatoes and make Mediterranean shrimp or baked Mediterranean salmon with potatoes! Ingredients :
- 650g (1.4 lbs) potatoes
- 200g (7 oz) cherry tomatoes
- 1 red onion
- 70g (2.5 oz) Taggiasca olives (or Kalamata olives)
- 50g (⅓ cup) capers
- 50g (⅓ cup) pine nuts
- Dried oregano (to taste)
- Extra virgin olive oil (to taste)
- Salt (to taste)
- Black pepper (to taste)
How to make Mediterranean-Style Potatoes:
- Peel the potatoes then cut them into wedges and then into squares.
- Take a baking pan and place a sheet of baking paper on it.
- Spread all the potatoes in pieces in the baking sheet.
- Add the cherry tomatoes cut in half or in 4 parts.
- Add the taggiasca olives and the thinly sliced red onion.
- Also add the pine nuts, pickled capers.
- Add coarse salt and ground black pepper.
- Also add plenty of extra virgin olive oil and dried oregano then bake the Mediterranean-style potatoes in a preheated ventilated oven at 180/200 °C (400 °F) for about 45 to 50 minutes until the potatoes are cooked and soft.
- Take the Mediterranean-style potatoes out of the oven and add a little more oregano if you like.
- Serve the Mediterranean-style potatoes piping hot or warm.
Tipps:
- You can use any variety of potatoes.
- You can use cherry tomatoes or even tomatoes cut into small pieces.
- You can add pickled or salted capers.
- You can not put pine nuts and put almonds.
- You can not put red onion but use golden or white or instead you can omit it completely.
- You may not put pepper.
