Ingredients :
- 250g (2 cups) ’00’ flour
- 130ml (½ cup) water
- 4g (1 teaspoon) fresh yeast
- ½ teaspoon salt
- 150g (1 cup, grated) zucchini
- 100g (⅔ cup, diced) cooked ham
- 100g (1 cup, grated or diced) provola cheese
How to make Mini Focaccia with Zucchini and Ham:
- Dissolve yeast in water, pour flour into a bowl, add salt and mix then add yeast and knead well.
- If you prefer you can reduce the yeast and lengthen the resting time..
- Make a ball and set aside a couple of hours, after the time has elapsed take the dough and divide it into 8 pieces or less if you prefer larger scones.
- Make small balls, crush them and place them on the oven sheet lined with paper or in the basket of the air fryer as I did, and let rest 20 minutes.
- Brush with oil then bake and bake in a hot oven at 180° for about 12 minutes, or at 190° in the air fryer for the same time.
- Remove from oven, let cool and cut in half, stuff with ham pieces, provolone cheese and zucchini grated with a wide-hole grater then return to oven to melt cheese.
