  • For the Tomato Sauce
  • 400g (14 oz) can chopped tomatoes
  • 1 medium onion, finely diced
  • 1 clove garlic, minced
  • 2-3 tbsp (30-45ml) olive oil
  • 1 tsp paprika powder
  • 1 tsp dried oregano
  • Chili flakes, to taste
  • Salt and freshly ground black pepper, to taste

For the Topping/Filling

  • 200g (7 oz) grated cheese of your choice (e.g., mozzarella, cheddar, or Swiss)
  • 100g (3.5 oz) sliced salami
  • 40g (1.4 oz) olives, sliced
  • Fresh basil leaves, for garnish

How to make New Year’s Pizza Muffins:

  1. Fry the onion and garlic in olive oil until translucent.
  2. Add the tinned tomatoes, season and simmer for approx. 15 minutes
  3. Cut the salami into thin rings and chop the olives
  4. Preheat the oven to 220 degrees top and bottom heat
  5. Butter a muffin tin and dust with flour so that the dough does not stick to the tin (this is not necessary for silicone tins)
  6. Roll out the pizza dough thinly and cut into approx. 8×8 – 10×10 cm squares (depending on the size of the muffin tin).
  7. Then place this in the tin
  8. Fill with 2-3 spoonfuls of tomato sauce, sprinkle with cheese, salami and olives and bake for approx. 15 minutes at 220 °C (430°F)  top and bottom heat
  9. Remove from the oven, sprinkle with fresh basil and serve warm or cold.
