Ingredients :
- 350g (12 oz) penne pasta
- 300ml (1¼ cups) tomato passata (strained tomatoes)
- 300ml (1¼ cups) heavy cream
- ½ shallot, finely chopped
- 30ml (2 tablespoons) extra virgin olive oil
- Salt, to taste
- Fresh parsley, chopped, for garnish
How to make Penne al Baffo:
- We take the frying pan and heat a little oil, add chopped shallot and let it brown then add tomato puree, a pinch of salt and cream. We stir everything and let it cook for 5-10 minutes.
- We cook the pasta and then drain it directly al dente in the pan.
