Puff Pastry Pizzas: Small in Size, Big on Flavor

Puff Pastry Pizzas are a quick and easy appetizer that is suitable for any occasion. They are very easy to prepare and quite quick, thanks to the use of puff pastry. In this recipe the Pizzas are stuffed, in fact two layers of puff pastry are overlapped before putting the tomato and mozzarella on top. This way they will turn out even more delicious and mouthwatering.

Ingredients :

  • 2 sheets puff pastry (450g/16oz total)
  • 100g (3.5oz) tomato passata
  • 180g (6.3oz) shredded pizza mozzarella
  • Extra virgin olive oil, for drizzling
  • 1 handful mixed olives, pitted and sliced
  • Dried oregano, to taste
  • Sea salt and freshly ground black pepper, to taste

How to make Puff Pastry Pizzas:

  1. Flatten the puff pastry and cut out circles 6 cm in diameter.
  2. Season the tomato passata with a pinch of salt, pepper, dried oregano and a drizzle of oil
  3. Flatten the puff pastry and cut out circles with a 6-cm-diameter mold. Do the same with the other roll of puff pastry (they will serve to overlap)
  4. On the circles of the first puff pastry roll, put a spoonful of tomato and some mozzarella cheese
  5. Overlap the circles of the other roll. Top with more tomato, mozzarella, oregano and a few olives
  6. Bake in a preheated oven at 190°C (375°F) and bake for about 15 minutes, then take out of the oven and serve.
