Quick Thermomix Sponge Cake: Perfect for Birthday cakes, sweet rolls, and dessert

Quick Thermomix Sponge Cake is effortless and alternative to the Sponge Cake recipe, and if you also have this appliance at home then you can make this recipe right away that I am sure will give you so much satisfaction. Sponge cake is one of my favorite preparations, a staple of Italian pastry making with which I have made a thousand CAKES over the years. Soft, light and versatile, it is perfect for Birthday cakes, sweet rolls, and desserts. But how to get a perfect sponge cake? With the help of the Thermomix, it is quick and easy, but it is still important to follow some golden rules.

Ingredients :

For a 24 cm (9-inch) cake :

  • 5 eggs (at room temperature)
  • 300 g (1 1/2 cups) caster sugar
  • 100 g (3/4 cup) plain flour
  • 200 g (1 2/3 cups) cornflour
  • 1 sachet (16 g or 4 tsp) baking powder (optional)

How to make quick Thermomix Sponge Cake:

Let’s prepare the Dough:

  1. Let’s mount the butterfly and put the whole eggs at room temperature and sugar inside the mug.
  2. We set SPEED 4 and TIME 5 min.
  3. Meanwhile, in another bowl we put the flour, starch and baking powder (optional but I put it in for a better and more stable result).
  4. With the Butterfly in motion SPEED 4 we add the powders a little at a time then run at SPEED 4 and TIME 3 min.
  5. The mixture will be frothy, if you want in the process you can add some orange or lemon zest to flavor the sponge cake.

COOKING:

  1. Once the dough is ready we can proceed to baking.
  2. We lightly butter and flour the baking pan and pour the dough inside.
  3. We bake in a hot oven 170°C (340°F) static for about 25-30 minutes (I do not recommend the fan mode as it may lower it).
  4. Once ready let’s take it out of the oven and let it cool completely in the pan then turn it out and use it for our cakes.
