Ricotta Jam Crumble Cake: An Amazing Dessert, a Simple and Delicious Cake or Tart!
You’re probably all familiar with crumble cakes. It’s a very practical cake – you just need to put flour, eggs, sugar, butter, and a little yeast in a bowl to make a rather coarse dough. Then, assemble the base without compressing it too much, and you can fill it with anything you like: ricotta, jam, hazelnut cream, pistachio cream, fresh fruit – the choice is yours!
Ingredients:
For the dough:
- 2 3/4 cups (350g) all-purpose flour
- 1/2 cup + 1 tbsp (120g) butter
- 1 large egg (or 2 small)
- 2/3 cup (130g) sugar
- 1 1/2 tsp (6g) baking powder
For the filling:
- 1 cup (250g) cow’s milk ricotta
- 1/4 cup (50g) sugar
- 1/2 cup (150g) jam (your favorite)
How to prepare Ricotta Jam Crumble Cake:
For the dough:
- Put the chopped butter and sugar in a bowl and work it into a cream with a wooden spoon.
- Add the egg to the butter cream and stir until the egg is fully incorporated.
- Add the flour and baking powder to the mixture.
- Knead with your fingertips to form a crumbly dough.
For the filling:
In a bowl, knead the ricotta cheese with the sugar into a creamy mixture.
If you like, you can pass it through a sieve.
For the Ricotta Jam Crumble Cake:
- Place 3/4 of the dough in a buttered and floured cake tin, spread it out with your hands, and evenly distribute the ricotta cream on top.
- Add the jam and cover with the remaining dough.
- Bake the crumble cake with ricotta and jam in a preheated oven at 350°F (180°C) for about 35 minutes. Remove from the oven and let it cool completely before removing from the tin.
Tips:
- You can use any jam you like.
- You can replace the jam with fresh fruit such as strawberries, raspberries, blackberries, blueberries, peaches, apricots, apples, or pears.
- If you prefer a rustic tart, you can halve the amount of all-purpose flour and use whole wheat flour instead.
