Salt Cod Fritters: A Golden, Crispy Explosion of Flavor…
Salt Cod Fritters constitute a delicious appetizer that is ideal to start a seafood lunch. I prepare them especially in this season and during the holiday season, as cod is a fish enjoyed by the whole family and surprisingly even by the little ones. Their making is extremely simple, and they are a pleasure to present on the table.
Ingredients for Salt Cod Fritters:
- 500 g (about 2 1/2 cups) salt cod, already soaked and desalted
- 180 g (1 1/2 cups) all-purpose flour
- 2 large eggs
- 10 g (2 tsp) baking powder
- 100 ml (1/3 cup + 1 tbsp) milk
- Salt to taste
Freshly ground black pepper to taste - Vegetable oil for frying
How to make Salt Cod Fritters:
- Start by boiling the cod in a pot of water for about 15 minutes. Once cooked, drain it and be sure to remove all the bones. Crumble it and set it aside.
- In a bowl, combine the sifted flour, baking powder, a pinch of salt and a pinch of pepper. Add the milk in a trickle and the previously beaten egg. Stir until the batter is smooth and incorporate the codfish.
- When the batter is well blended, heat the oil and, using a teaspoon, portion the batter to form the Cod Fritters. Fry them for about 2 minutes or until puffy and golden brown.
- When ready, remove them from the oil and place them on a surface lined with paper towels to remove excess oil. If desired, you can add additional salt and serve the Cod Fritters hot.
