Ingredients:

  • 2 cups (240g) all-purpose flour
  • 3.5 oz (100g) amaretti cookies (almond cookies)
  • 3 eggs
  • 3/4 cup (150g) sugar
  • 1/2 cup (120ml) milk
  • 1/3 cup (80ml) vegetable oil
  • 2 tsp baking powder
  • Pinch of salt

How to make Soft Amaretti Cake:

Prepare the batter:

  1. Beat the eggs with sugar until light and fluffy.
  2. Add the oil (or melted butter) and milk, and continue stirring.
  3. Gradually incorporate the flour sifted with baking powder and salt.
  4. Add the crumbled amaretti cookies and gently mix with a spatula.

Baking:

  1. Pour the batter into a greased and floured cake pan.
  2. Bake in a preheated oven at 350°F (180°C) for about 35-40 minutes. Test with a toothpick to check if it’s done.

Decorate and serve:

  1. Let the cake cool completely.
  2. Dust with powdered sugar before serving.
