Soft Apple Cake: The Secret to Making It as Soft as a Cloud

If you wish to prepare Soft Apple Cake according to the version of a great Italian pastry chef, perhaps most famous for both his long career and personality, such as Iginio Massari, you can follow this easy recipe that requires only a little attention. The result will be a soft, fluffy, light and delicious cake with an unmistakable fragrance. After all, this is one of the most genuine and prepared cakes in several European countries and beyond. Ingredients :

  • 700g (4 pieces) apples, peeled and chopped
  • 200g (1⅔ cups) all-purpose flour
  • 200g (1 cup) granulated sugar (caster sugar)
  • 200ml (¾ cup + 2 tbsp) milk
  • 100g (7 tbsp) unsalted butter, melted
  • 2 large eggs
  • 1 sachet (2¼ tsp or 7g) baking powder
  • 1 lemon, zested and juiced
  • 3g (1½ tsp) ground cinnamon

How to make Soft Apple Cake:

  1. Start by cleaning the apples: peel them, remove core and seeds, then cut them into thin, even slices. Place them in a bowl with water acidulated with lemon juice, also adding lemon zest to flavor them and prevent them from blackening. Turn on the oven and bring it to a temperature of 180 °C (350 °F).
  2. Whip the eggs with half the amount of sugar by hand or with a planetary mixer. When they become light and fluffy, add the rest of the sugar mixed with cinnamon powder. Continue to whisk and then add the already sifted flour and baking powder. Pour in the milk at a trickle, slowing the speed down to low. Also add the melted butter that has cooled to room temperature.
  3. Drain the apples from the water and, with the help of a wooden spoon, incorporate them into the mixture. Pour the mixture into a 24- to 26-cm-diameter pan already lined with baking paper or, alternatively, greased with a little butter and dusted with flour.
  4. Bake the cake in the oven for about 45 minutes or until the surface is golden brown. To make sure it is baked, always test the toothpick in the center of the cake; if it comes out dry, the cake is ready, otherwise continue baking.
  5. Once it is baked, take it out of the oven, let it rest for a while and then, before serving, make a nice dusting of powdered sugar or brown sugar. Have a delicious treat!
