Soft jam tart is a soft shortbread cake, which I offer in a butterless, seed oil version.
It is a kind of tart cake, if you want to call it that, which does not quite have the consistency of a classic soft cake, but it also does not have the consistency of classic butterless shortcrust pastry. Describing it is difficult, but it is so simple to prepare that you will be quick to try it!
You can use any kind of jam for the filling, as well as classic custard or a mouth-watering hazelnut or pistachio spread: they are added to the surface before baking and rest assured that, thanks to the texture of the dough, it will not fall to the bottom during baking!
Ingredients :
- 150g (3/4 cup) granulated sugar
- Zest of 1 lemon
- 2 whole eggs
- 1 egg yolk
- 120g (1/2 cup) sunflower oil
- 40g (3 tablespoons) milk
- 200g (1 2/3 cups) all-purpose flour / plain flour
Pinch of salt - 5g (1 teaspoon) baking powder
- 200g (2/3 cup) jam or spread of choice
- Powdered sugar / icing sugar for dusting
How to make Soft Jam Tart:
- To prepare this shortbread tart, grate the peel of a lemon and put it in a bowl.
- Also add the sugar, eggs, oil, milk and a pinch of salt.
- With electric whips, work at medium speed until all the ingredients are blended.
- Add the sifted flour and baking powder in several batches and continue working with the whips until the mixture is thick, with a “spreadable” and creamy consistency.
- Line a 22-cm-diameter hinged mold with baking paper.
- Pour in all the mixture and level the surface with the back of a spoon.
- Having done this, with the tip of the spoon create 3-4 cm holes well spaced apart.
- Fill, at this point, these holes with spoonfuls of jam of your favorite flavor or with custard or hazelnut spread.
- Be generous in putting in the jam, because this will, in baking, partially descend into the cake, making it even more mouthwatering!
- Preheat the oven to 170°C (340°F) and, when it comes to temperature, bake for about 35 minutes.
- When your soft jam tart cake is golden brown on the surface, it will be ready.
- In any case, do the toothpick test before taking it out of the oven.
- Once ready, take it out of the oven, let it cool completely and then garnish it with a little powdered sugar!
- And there you have it, your butterless soft tart is ready to be enjoyed in all its goodness!
