Soft Orange Cookies

Soft orange cookies are delicious treats that are quick to make and melt in your mouth. Easy, quick and delicate, they have a distinct orange flavor that makes them perfect for afternoon tea.

Orange cookies are a variation of soft lemon cookies and classic crinkle cookies, their texture differs from that of the classic cookie, it is a real pastry born many years ago in the United States and declined in many versions. Characterized by a mouthwatering crunchy crust created by the double layer of sugar on the outside, they have a soft and melting heart.

Ingredients:

  • 300g (2 1/2 cups) all-purpose flour
  • 120g (1/2 cup + 1 tablespoon) granulated sugar
  • 100g (7 tablespoons) unsalted butter, softened
  • 1 medium egg
  • 50g (3 1/2 tablespoons) freshly squeezed orange juice
  • 10g (2 teaspoons) baking powder
  • Zest of 1 organic orange, finely grated

For the finishing touch

  • Granulated sugar, as needed
  • Vanilla-flavored powdered sugar (vanilla icing sugar), as needed

How to prepare soft Orange Cookies:

  1. Let the butter stand at room temperature for 20 minutes so that it becomes soft; I do this with the microwave, 30 to 40 seconds at maximum power is enough.
  2. Put the soft butter in a bowl add the sugar and beat it with electric whips.
  3. Still whipping, add the room temperature egg and, when it is incorporated, add the orange juice and zest.
  4. Sift the flour with the baking powder and add it to the mixture, working it all together with your hands or a spatula until you get a smooth dough.
  5. Form into a loaf and refrigerate for 1 hour.
  6. After resting, form 20 g balls and roll them first in caster sugar then in powdered sugar.
  7. Lay the cookies on a baking sheet lined with parchment paper, keeping them well apart; they will increase in volume while baking. With this amount of dough you will get 30 cookies.

How to bake the soft orange cookies:

  1. Bake the cookies in a preheated static oven at 170°C (340°F) for 12 to 13 minutes, they should remain light and soft to the touch.
  2. Let the cookies rest in the drip pan until completely cooled before moving them, they are very soft and at risk of breaking.
  3. The soft orange cookies are ready to serve.
