Ingredients for Sugar Brioche Buns

For the Dough:

  • 500g (4 cups) bread flour (Manitoba flour or strong flour)
  • 15g (0.5 oz) fresh yeast (or 7g/2 tsp dry yeast)
  • 50g (¼ cup) granulated sugar
  • 250ml (1 cup) lukewarm milk
  • 80g (⅓ cup) softened butter
  • 1 egg
  • 1 pinch of salt
  • 1 tsp vanilla extract

For Finishing:

  • Milk (as needed, for brushing)
  • Granulated sugar (as needed, for sprinkling)

How to make Sugar Brioche Bun:

Prepare the dough.

  1. In a large bowl, dissolve the brewer’s yeast in warm milk with a tablespoon of sugar and let it stand for about 10 minutes, until it forms a light foam.
  2. Add the sifted flour, remaining sugar, and egg and start kneading. Add the soft butter a little at a time and continue kneading the dough until it is elastic and smooth.
  3. Cover the bowl with a tea towel and let rise for about 2 hours, until doubled in volume.

Shape the brioche

  1. After the rising time has elapsed, transfer the dough to a lightly floured surface and divide it into small portions of about 50-60 g each.
  2. Form smooth balls and lay them on a baking sheet lined with parchment paper, spacing them slightly apart. Cover with a cloth and let rise for another hour.

Baking the brioche balls

  1. Preheat the oven to 180°C (350°F) and bake the brioche for about 15 to 18 minutes, until golden brown on the surface.
  2. As soon as they come out of the oven, brush them with warm milk and immediately dip them in caster sugar to get the typical sweet and crispy finish.

Storage Tips

  • Sugar brioche will keep soft for about 2 days if stored in a plastic bag or airtight container.
  • If you want to keep them longer, you can freeze them already baked and warm them slightly in the oven before serving. To keep their fragrance, you can also reheat them for a few seconds in the microwave or in the oven at 150°C (300 °F) for a few minutes.
