Super Creamy Apple Cake: More apples than dough

Today’s Super Creamy Apple Cake is a cake packed with lots of apples in the batter, containing even more apples than dough to create a moist and creamy effect.

If you love cakes that are healthy, light, and easy to digest, then you simply have to try my recipe filled with fruit. Who could say no? It’s a cake with a moist texture, perfect for a wholesome yet low-calorie breakfast, a nice afternoon snack, or even a delightful dessert to finish off a meal.

Ingredients for the Super Creamy Apple Cake:

  • 500g apples (about 4 medium apples)
  • 2 eggs
  • 100g sugar (about ½ cup)
  • 1 pinch of salt
  • 1 lemon
  • 100ml milk (about ⅓ cup + 1 tbsp)
  • 1 packet vanilla sugar (or 1 tsp vanilla extract)
  • 1 packet baking powder (about 2 tsp)
  • 180g flour (all-purpose, Type 00) (about 1 ½ cups)

How to Make Super Creamy Apple Cake:

  1. Peel the apples and slice them thinly using a mandoline or a sharp knife. Place them in a bowl and add lemon juice to prevent them from browning.
  2. Crack the eggs into a bowl, add a pinch of salt, and beat for a few minutes. Then, add the sugar and vanilla sugar (or extract) and mix well.
  3. Beat the mixture until it’s fluffy and airy. Then, add the milk, lemon zest, flour, and sifted baking powder. Beat for another few minutes until combined.
  4. Gently fold the sliced apples into the batter. Grease and flour your baking pan, then carefully pour in the batter.
  5. Bake at 180°C (350°F) for about 50 minutes.
  6. Once baked, remove from the oven and let it cool. Dust with powdered sugar, slice, and serve.
