The combination of the crisp puff pastry, sweet cream cheese and soft, juicy tangerines will make this dessert irresistible for everyone.
Ingredients:
- 1 sheet (300g / 10.5 oz) rectangular light puff pastry
- 6 mandarin oranges, peeled and kept whole
- 7 tsp stevia sweetener (or 7 tbsp maltitol, erythritol, or sugar)
- 1 tsp vanilla sugar
- Juice of 1 lemon
- 2-3 tbsp light cream cheese or protein-rich spreadable cheese
- Water, as needed
- Powdered sugar (icing sugar), for dusting
How to make Tangerine Puff Pastry Dessert:
- To begin, unroll the puff pastry on a sheet pan lined with appropriate paper, cut it into strips a couple of centimeters across the length with a pastry wheel.
- Now dust the strips with a little (sifted) powdered sugar, after which bake in a well-heated oven for 15 minutes at a temperature of 180°C (350°F).
- Meanwhile, pour the water into a saucepan, add 5 teaspoons of stevia sweetener (or 5 tablespoons of sugar or other ntatural sweetener), stir, add the vanilla sugar, mix and bring the water to a boil.
- Now insert the whole and peeled tangerines, stir gently, let them boil for 2 minutes and then remove the fruit with a spoon.
- Return the spreadable cheese to a bowl, incorporate the remaining 2 teaspoons of stevia sweetener (or 2 tablespoons of sugar or natural sweetener) and the juice of half a lemon, and stir appropriately to make a thick cream.
- When this is done, fill the puff pastry strips with the cream cheese (spread it evenly). This will be the base of your cake and then lay the mandarins on top in a row but turned sideways.
- Finally helping yourself with the baking paper roll up by taking the base of puff pastry strips and forming the classic roll.
- Finally keep the roll in the baking paper, then place it to rest for 2 hours in the refrigerator before serving and cutting into slices!
