The Best Pumpkin Roll Cake is one of my favorite pumpkin recipes, offering a twist on the classic cookie Cake by incorporating cooked pumpkin into the mix. You can cook the pumpkin in the microwave, on the stovetop, roasted whole in the oven, or even in an air fryer—the rest of the process remains the same as the traditional cookie dough.

Ingredients :

  • 5 eggs
  • 350 g (1 ½ cups) cooked pumpkin puree
  • 200 g (1 ⅔ cups) all-purpose flour
  • 200 g (1 cup) sugar
  • 50 ml (3 ½ tbsp) neutral oil (e.g., sunflower or vegetable oil)

How to make Pumpkin Roll Cake:

Preparing the Pumpkin

  1. Roast the Pumpkin: Roast a whole pumpkin in the oven. Once cooked, cut it into pieces and remove the seeds.
  2. Scoop the Flesh: Use a spoon to scoop out the pumpkin flesh from the skin and place it in a bowl. Weigh out 350 g (1 ½ cups) of the flesh.
  3. Blend the Pumpkin: Use an immersion blender to puree the pumpkin until smooth and lump-free.

Preparing the Eggs

  1. Separate the Eggs: Separate the egg yolks from the whites.
  2. Whip the Egg Whites: Beat the egg whites until stiff peaks form.

Making the Dough

  1. Whisk Yolks and Sugar: In a bowl, whisk the egg yolks and sugar with an electric mixer until light and frothy.
  2. Add Oil and Pumpkin: Mix the oil into the pumpkin puree, then add it to the egg yolk mixture. Stir with a spatula until combined.
  3. Add Flour: Gradually add the flour, mixing with the electric mixer until fully incorporated.
  4. Fold in Egg Whites: Gently fold the whipped egg whites into the pumpkin mixture using a spatula, moving from bottom to top to keep the mixture light.

Baking the Cookie Dough

  1. Prepare the Tray: Line a rectangular baking tray (25×35 cm or 10×14 inches) with parchment paper.
  2. Spread the Dough: Pour the dough into the tray and spread it evenly with a spatula to create a uniform thickness.
  3. Bake: Bake in a preheated convection oven at 180°C (350°F) for 8 minutes, or until the surface is golden.

Cooling and Rolling

  1. Cool Slightly: Remove the cookie dough from the oven and let it cool slightly.
  2. Flip and Roll: Flip the dough onto a clean kitchen towel, peel off the parchment paper, and roll it up in the towel.

Finishing Touches

Unroll and Fill: Once completely cooled, unroll the dough and fill it as desired.
