In the quiet kitchens of convents across Málaga and Andalusia, generations of nuns have been whipping up this delightfully simple sponge cake. It’s not just a recipe; it’s a slice of history, a taste of tradition that’s been perfected over countless afternoons of baking and prayer.
Ingredients:
- 4 large eggs
- 240ml (1 cup) milk
- 480ml (2 cups) sugar
- 720ml (3 cups) all-purpose flour (plain flour)
- 240ml (1 cup) sunflower oil
- 1 level tablespoon baking powder
- 2 teaspoons vanilla extract
- A pinch of salt
- Powdered sugar (icing sugar) for decoration
How to prepare traditional Sponge Cake:
- Incorporate the egg whites in a large bowl or in the food processor.
- Beat the egg whites until stiff.
- Add a little of the total amount of sugar we need.
- Add the salt and mix. Set aside.
- In another bowl, mix the rest of the sugar with the vanilla and the egg yolks. If you are using a food processor, do the same process.
- Beat until the mixture thickens, increases in volume and has a creamy appearance.
- Add the oil and milk and beat again. It is important that the mixture is well beaten as this will make it fluffy and high.
- Add the yeast and the flour, previously sifted and very little by little, mixing at low speed until they are completely integrated.
- Gradually add the whipped egg whites.
- We go mixing smoothly and making enveloping movements from bottom to top.
- Preheat the oven to 170º C.
- The mold we are going to use is of about 22 cm.
- Grease the mold with a little oil or butter and place baking paper both on the sides and on the base to make it much easier to unmold the cake.
- We also grease the parchment paper.
- Bake the cake at 170º C for 1 hour.
- After about 50 minutes, check the doneness of the cake by poking the center with a toothpick. If it is clean when you take it out, it is perfectly cooked.
- Remove the cake from the oven and place it on a wire rack.
- Let it cool for 10 minutes in the mold.
- After this time, remove from the mold and let it cool completely.
- Sprinkle with a little powdered sugar and it will be perfectly ready to serve.
