Some condo relationships can sometimes strain our patience, you have to admit it: you want it for incompatibility of character, you want it because you are new to the condo and some dynamics are completely external to us and our way of life or thinking, you just want it because among some you never flow good blood. Arguments can happen, it’s true, but eventually, if the respect is always mutual, those same cold relationships can warm up with little moments of socializing. And it is the case of one of our loyal readers who wanted to share a special recipe with us.
Ingredients:
- 500g (1.1 lbs) turkey breast slices
- 250g (9 oz) fresh spinach leaves, stemmed
- 150g (5.3 oz) cooked ham, thinly sliced
- 150g (5.3 oz) sliced cheese (such as provolone or mozzarella)
- 2L (8.5 cups) tomato sauce
- 240ml (1 cup) white wine
- Salt and freshly ground black pepper, to taste
- Dried oregano, to taste
- Fresh rosemary, to taste
- 1 garlic clove, minced
- Water, as needed
How to make Turkey Spinach Roll-Ups in Tomato Sauce:
- We begin by preparing our second start from the roll: we stretch a parchment paper on a cutting board and then arrange the slices of turkey, slightly overlapping each other. We barely press the meat so that it adheres well and we season with salt, pepper, oregano, rosemary in abundance.
- We then place the spinach on the surface, flattened and well pressed, then the ham and cheese. We start rolling vertically, then from the longer side, and shake the whole thing.
- With a kitchen twine we create a knot in the center, then slide the wire horizontally under the roll, pass it from the last two ends and then return to the first central knot, close.
- Now we must push off the split in all the empty spaces always performing closures, this operation will allow the meat not to open when cooking.
- When the rollé is ready, well sealed and tight, we spray the bottom of a wide pan with high edges with a generous little oil, add the garlic and wait for it to rock.
- We then cook the roll inside and cook all sides for a few minutes until they turn golden and with the typical brown crust.
- Blend with white wine and wait for the alcoholic part to evaporate completely.
- Add the tomato puree, we season with other salt, pepper and oregano, stirring the pan lightly so that the sauce of the level.
- Add about 2 glasses of water, cover the pan with a lid and cook for about 30/40 minutes. The sauce must shrink and the meat will be tender and well cooked.
