ACE Cake is a true classic in my kitchen, a recipe that combines the freshness of citrus fruits with the sweetness of carrots, delivering a soft and fragrant result. This cake, loved by children and appreciated by adults alike, has become a family ritual: every time I prepare it, it’s a little celebration. Its simplicity makes it ideal for any time of day: for breakfast, as a snack, or as a dessert after meals. Ingredients:
- 300 g (2 ½ cups) flour
- 50 g (½ cup) cornstarch
- 3 eggs
- 200 g (1 cup) maltitol (or sugar)
- 250 g (2 cups) grated carrots
- 100 ml (⅓ cup) orange juice
- 50 ml (3 tablespoons) lemon juice
- 80 ml (⅓ cup) sunflower oil
- Zest of 1 orange
- Zest of 1 lemon
- 1 packet (approx. 2 tsp) baking powder
- 2 heaped tablespoons citrus marmalade
- Powdered sugar, to taste
How to prepare ACE Cake:
- Prepare carrots: First, wash and peel the carrots. Then cut them into pieces and puree them with sunflower oil until smooth and creamy. This preparation will be the base for your cake.
- Prepare the batter base: In a bowl, beat the eggs with the maltitol (or sugar) using an electric whisk until the mixture is light and frothy. Add the grated orange and lemon zest along with their respective juices and mix well. Add the carrot cream and continue mixing.
- Mix the dry ingredients: Sift the flour and cornstarch and gradually incorporate them into the mixture, stirring to avoid lumps. Finally, add the baking powder and mix until a uniform batter is formed.
- Bake the cake: Grease and flour a 24cm diameter round cake tin. Pour the batter into the tin and smooth it with a spatula. Bake in a preheated oven at 180°C (350°F) for about 40-45 minutes. To check if it’s done, insert a toothpick into the center of the cake: if it comes out clean, the cake is ready.
- Cool and decorate: After baking, let the cake cool completely before removing it from the tin. Slightly warm the citrus marmalade in a bain-marie or microwave to make it easier to spread. Brush the surface of the cake with the marmalade and finally dust it with powdered sugar to sweeten it.
