Baked NOT fried crispy golden Calamari…
Baked calamari good, crispy and light, a recipe I recommend you to try as soon as possible if you love the famous fried calamari rings, actually I had never thought of baking them, I was afraid they would become chewy, ok I admit it, I was very skeptical!
Then at the fishmonger’s I found some nice calamari veracious of the big and tender kind and I thought of trying them in the oven, to my surprise they turned out to be so tender! And you say, thank you eh! With fresh, veracious squid it’s easy!
Ingredients:
- 1 kg (2.2 lbs) squid (calamari), fresh or frozen
- All-purpose flour, as needed
- Extra virgin olive oil
- Salt
How to make Baked NOT fried crispy golden Calamari:
WITH FROZEN SQUID
- You can take them directly already gutted ( which I recommend).
- Let them thaw at room temperature and then with kitchen scissors or a knife, cut them into rounds and dry them with kitchen paper.
WITH FRESH SQUID
- You can decide to have the fishmonger clean them or gut them yourself, either way always wash them under the water tap, cut them into rounds and dry them well.
- In a bowl put the flour and add the squid rings with their respective little tufts.
- Flour them well and transfer them to a baking sheet with baking paper, trying not to overlap them.
- Drizzle them with extra virgin olive oil and bake the squid rings in a static oven at 200° for about 15 minutes.
- Take the baked squid out of the oven add a pinch of salt and enjoy!
