Cheesy Potato Fritters : Crisp, Cheesy Treat You’ll Love

Cheesy Potato Fritters is a giant delicious pancake, a smart, quick and yummy recipe, a tasty dinner saver, ready in very few minutes. I didn’t have much in the fridge and pantry, nothing ready for dinner, so, I took 4 potatoes, grated them, cut a piece of cheese and made this treat. It literally went down a storm! The potato fritter is crispy on the outside and soft and stringy on the inside.

Ingredients :

  • 5 potatoes about(700g)
  • 150g (5.3 oz) scamorza cheese (or smoked mozzarella)
  • 3 tablespoons cornstarch OR 3 tablespoons grated Parmesan cheese
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • Mixed herbs or spices of your choice, to taste (e.g., dried oregano, thyme, or paprika)
  • Extra virgin olive oil, as needed
  • Breadcrumbs, as needed

How to make Cheesy Potato Fritters:

  1. First peel the potatoes and grate them with a wide-hole grater (the one you use to grate shredded cheese).
  2. Put the grated potatoes in a bowl, add the cornstarch, grated Parmesan cheese, spices to taste (I put rosemary, paprika and garlic powder), salt, black pepper and let everything mix together.
  3. Pour a drizzle of extra virgin olive oil into a pan, put half the potato mixture and level it well, add the chopped scamorza cheese, cover the filling with the remaining grated potatoes and compact well.
  4. Put some breadcrumbs and a drizzle of oil on the surface of the potato fritter and let it cook, on a medium-low flame and without a lid, for 10 minutes on each side, turn it like an omelet, it should be nicely browned.
