Ingredients :
- 2 kg (4.4 lbs) fresh mussels, cleaned and debearded
- 2 cloves garlic, finely minced
- 250 g (2 cups) fine breadcrumbs
- 30 g (1/2 cup) fresh parsley, finely chopped
- Sea salt, to taste
- Freshly ground black pepper, to taste
- 1 large lemon, zested and cut into wedges
- 60 ml (1/4 cup) extra virgin olive oil, for drizzling
How to make perfect Baked Mussels:
- The first step is cleaning the mussels. You need to rinse the mussels under running tap water and remove the barbs using a knife. Also remove all encrustations on the shells using a damp net. After doing this, rinse the mussels again under cold running tap water.
- In a nonstick pan place the cleaned mussels and cook them for 3 minutes over medium heat, after covering the mussels with a lid. Stir occasionally with a wooden spoon.
- When the mussels are all open it is time to turn off the heat.
- Simply using your hands remove half of the empty shell of the mussels and leave only the part with the seafood.
- Arrange the mussels on a baking sheet covered with a sheet of parchment paper.
- In a bowl place breadcrumbs along with finely chopped garlic and parsley. Add salt and extra virgin olive oil as well. Then mix well until you have a smooth seasoning.
- Using a spoon, pour the dressing over the mussels until they are completely covered.
- Bake the mussels and cook for 5 minutes at 190°C (375°F), setting the oven to fan mode. The surface of the mussels should become nice and golden and crispy.
- Serve the mussels in a tray with half a fresh lemon.
