Shortcrust sweet pastry : Ideal for Pies and Cookies is a sweet recipe for making simple and delicious butter cookies to be frosted with dark chocolate or filled with Nutella or jam.
This sweet cookie dough recipe is a very simple recipe to make with a very crumbly shortbread dough that does not warp in baking with perfect dark chocolate frosting.

Ingredients:

For the Pastry:

  • 350g (2 3/4 cups) plain flour / all-purpose flour
  • 150g (1 1/4 cups) potato starch
  • 150g (1 1/4 cups) icing sugar / powdered sugar
  • 5g (1 teaspoon) baking powder
  • 250g (1 cup / 2 sticks) unsalted butter, cubed
  • 1 whole egg
  • 1 egg yolk
  • 1 tsp vanilla extract

For the Filling and Glaze:

  • Nutella or jam, as needed
  • 250g (1 1/8 cups) dark chocolate, melted
  • 1 tsp glucose syrup  corn syrup

How to make Shortcrust sweet Pastry:

  1. To make this crumbly and delicious cookie perfect for Christmas for frosting or filling, we start by preparing the crumbly shortbread base.
  2. In a bowl mix the flour, potato starch, baking powder and powdered sugar, add the butter and start kneading.
    Once a sandy mixture is obtained, add the whole egg and yolk and vanilla, knead until smooth.
  3. Wrap the resulting shortcrust pastry loaf with plastic wrap and let it rest in the refrigerator for about 2 hours or overnight.
  4. Once rested, roll out the shortcrust pastry on a floured work surface , obtaining a thickness of half an inch.
    Using a cookie cutter of any shape, cut out the cookies, place them on a baking sheet lined with parchment paper and bake at 180°C (360°F) for about 15 minutes.
  5. Once baked, allow the cookies to cool completely before frosting or stuffing.
  6. Melt the chocolate with a teaspoon of glucose or butter in a double boiler, and dip the cookies one at a time in the dark chocolate and add hazelnut crumbs, coconut flakes or colored sprinkles if you prefer.
  7. Once frosted, you can assemble the cookies by adding a nutella or jam filling if you prefer.
  8. Allow the cookies to dry on a foil-lined work surface before consuming them.
  9. At this point, your crumbly, mouth-watering Christmas cookie with chocolate frosting will be ready to enjoy.
